Satisfying cashews and crunchy pecans are covered with intensely sweet smoky flavour. This recipe is paleo and diabetic compatible- a fantastic go-to snack for your solo time or to share with friends.
1/2 cup raw cashews
1/2 cup raw pecans
2 tbl monk fruit
1 tea black salt
2 tbl smoked paprika plus 1 tbl for topping
In a cast iron pan mix monk fruit, paprika, and salt. Heat to medium high. Mix ingredients, they will start to combine into a crumb-like mixture. Add nuts. Stir to combine. Add in extra paprika. Make sure nuts are well coated. Spoon onto a plate to cool.
This recipe works with any nuts or seeds that you might want to try. You may want to change the flavour by adjusting the monk fruit or salt ratios. The sugary mixture can be very brittle, so if that form big balls take them out of the final mix. Be careful if you have fragile tooth health.
