“Bubby Lily’s Thrifty Tips” is named for my Grandma Lily who was a fantastic cook and nutritional force.
I love citrus! It makes everything taste so zingy! There are times, like when you are cooking dinner, when you don’t have a lemon or lime on hand. To make sure all of your recipes achieve their full yumminess potential I have developed this easy trick. When I use citrus juice for recipes I immediately peel and dry my fruit peels and make my own low cost citrus powder.
You need to do this with organic fruit only, as the drying will concentrate any chemicals on the surface. Scrub the outside with a natural bristle brush, rub with a clean towel and make sure they are very dry before you peel them.
Peel organic lemon, lime, orange or tangerines and leave it in a glass jar with the top off in a dry place. Check it every couple of days to make sure it has not developed mold, and throw away any pieces that are moldy. It is normal for the peels to become brown. When dried fruit is brightly coloured it means that harmful sulphates have been added to preserve them.
Once the peel is dry I run it in a coffee grinder to make my easy citrus powder. Keep it in a labelled glass jar with the ingredients and the date. Add to desserts, stews, smoothies or soups.
