Let’s plan ahead
How many times have you come home late from work, exhausted, hungry and find nothing healthy for you to eat. You are starving, can’t take it any more and just want to be past eating and into the relaxation part of your evening. I have been in this situation many times and found myself eating such weird things as stale crackers or old granola bars, not the best choices or the most yummy.
Easy, with lots of flavour. Sounds like a plan
Summer is great for the fantastic foods that are available, but the heat and our schedules make it hard to be motivated at the end of the day. For people like you and me I came up with a great solution. Do we need more energy?! Yes! Do we need great flavour! Yes! Do we need something that is easy to make?! Yes, of course, yes!
Tasty salad every day
Easy Kale Cabbage Slaw has the benefit of two star veggies. The cabbage has bucket loads of probiotics, fiber, and vitamin k, the kale has calcium and chlorophyll. These are both excellent for digestive health. Easy Kale Cabbage Slaw will keep in the fridge for up to a week and improves with age. It can be nice to eat it for a few days, add in to it to change the flavour. You will feel full, happy, and your body will thank you.
Easy Kale Cabbage Slaw

This is a great salad to make on Monday and keep in your fridge all week. The flavour improves as the kale and cabbage becomes softer and marinated by the dressing. If the bowl is getting low on salad I add in more kale, cabbage, or delightful yum yums, such as pistachio nuts, shredded beet, or raw carrots. This is an energy packed option for those ninety degree days when the most you can do is get a plate out of the cupboard.

Ingredients
Salad
1 bunch organic dinosaur kale or your favourite kale washed, with ribs removed, ripped into 1/2″ size pieces
1 cup organic white cabbage cut into shreds (about 1/4″ strips)
1/4 cup raw organic walnuts
Dressing
2 tab. Dijon mustard
1 clove organic garlic crushed
1 inch organic ginger chopped
Juice from one organic lemon
1/2 tea. organic lemon peel or citrus powder
1/2 c. organic extra virgin olive oil
1/2 c. braggs apple cider vinegar
salt and pepper to taste
Instructions
Mix all the ingredients for the dressing. Set aside. Sometimes I make double and keep it in the fridge for other salads, or use it to doctor this salad if it seems dry. Mix cabbage and kale in a large wooden bowl until combined. Sprinkle with walnuts. I like to add alot, so add more if you feel like it. Pour on dressing, cover and put it in the fridge. You can start eating it right away, but it will taste best by the next day.
Notes
This is an easy add on to any meal you are making. If you do a taco or sandwich, you can use this salad as filler. I also make it with avocado, seaweed and sesame seeds and have that as a bigger meal. The most important thing is consuming more veg and feeling like you enjoyed a delicious meal.
