A soft, delicious onion medley that can be served on tacos or as a stand alone appetizer. A delightful, smokey, and caramelized treat.
1-2 white or red onions
black lava salt
Cut onions in 1/4″ slices keeping them in the rounds. Heat a large cast iron pan on high heat. When it is hot add oil. Listen for the sizzle. Immediately add in onions. Stir every few minutes. Onions will start to soften. Keep cooking for about twenty minutes until onions are completely soft and caramelized. Turn off heat and allow the onions to cook on the stove top. Add salt to taste. Serve hot.
