This fruity pop tastes amazing on a hot summer day. I like to enjoy mine while walking on the sweaty streets of New York. Very cooling!
1 c. very ripe cherries
1/2 cup filtered water
1 tbs. monkfruit sweetener
Cut up half of the cherries into chunks. Fill into popsicle molds. Blend remaining cherries, water and sweetener. Fill liquid around the cherries. Add the popsicle handles. You may have to push them through the fruit to get them down to the bottom of the mold. Freeze solid. Enjoy!
You can make this recipe with any fruit that has a low glycemic index. Nice choices are strawberries, lemon, lime, grapefruit or peaches. I also like to experiment with herbs, which can add surprising flavour. If you don’t have such a sweet tooth you can omit the sugar and just savour the delightful flavour of your fruit. This recipe is great for fruit that is very soft and does not look perfect, but tastes amazing.
