My Chickpea Breakfast Fritters make a great brunch and breakfast choice for vegans, paleos and those who crave a healthier lifestyle. You can easily make Chickpea Breakfast Fritters at home for those times when the crunch alarm goes off.
My tasty Chickpea Breakfast Fritters are made with chickpea flour, which unlike a regular flat bread contains no gluten flour. Chickpea flour is also know as garbanzo bean flour, or Besam. For generations chickpea flour has been the go-to ingredients for creating addictively crispy pancakes in France (Socca and Panisse), Italy (Farinata), India, and Pakistan (Pakoras).
The batter usually contains egg as a binder, but to make it vegan I have substituted an egg re-placer made from flax seeds. Flax contains helpful oils such as omega 3s and lignans which support your immune system.
Another important ingredient to this recipe is onion. Chickpea flour can sometimes have a bitter flavour. The addition of onion gives the pancakes a delicious savoury flavour that you will love. Onions contain nutrients which improve the skin, cleans the blood, and support the organs.

Chickpea Breakfast Fritters- Diabetic, Vegan, Paleo

This delightful, vegan, paleo friendly, gluten free breakfast pancake can serve as a dazzling brunch blini or function as an afternoon snack. Chickpea Breakfast Fritters are great for those times when you need some serious crunch in your life.

Ingredients
4 oz filtered water
4 oz. chickpea flour
2 tea. whole brown flax seed
1 tea. salt
1 tea coconut or olive oil
1/2 red onion chopped
1 clove garlic
oil for frying
Instructions
In a high speed blender mix all ingredients except the oil for frying. Blend on high for 30 seconds. Let the mixture sit for 5 minutes. Heat a cast iron pan to a high heat. Add the oil. Create silver dollar sized pancakes with the mixture. Flip the pancakes when brown. Leave to cool on paper towel. Serve warm. They can be prepared in advance and kept warming in the oven.
Notes
If you really love onions you can add some cut up ones to the blended batter. This gives the pancakes a chunkier consistency, but very nice flavour. If I am making them for a party I do the blended version, as these look more chic. Pair the Chickpea Breakfast Fritters with yummy fillings such as 5 Minute Guacamole, Mahammara, 2 Minute Tomato Sauce or even just slice up some radishes or raw onions.
