This vegan, diabetic egg replacer can be used in all of your recipes where egg is needed to make the food rise, such as in the case of breads and muffins.
3 tabl. raw flax seeds
Mix the flax seeds and water in a high speed blender. Let it sit for five minutes. Add to recipe in equal quantity of the eggs that you are replacing.
You may need to test out your recipe to see how much of the egg replacer to add to achieved desired fluffiness. Flax adds omega 3 and fibre to your recipe.
